I made this blog in order to further distract me
from my final semester as a nursing student. Bad idea? Yes. But this way, if
all else fails, I have a back up plan. I am a vegetarian turned vegan and want
a way to share my easy, yummy, and usually healthy recipes. For I year a made
most of my meals in a dorm kitchen with limited supplies (wait, don’t all
college kids have a food processor and an immersion blender?) but still, that
means it's possible for virtually anyone to make these meals. Since I enjoy eating more then cooking, I will also be posting about wonderful vegan restaurants in the area that I frequent often. In my next life, I will be a food writer.

After seeing my sister easily transition from vegetarian to vegan land, I decided to give it a go. My experimentation to eliminate all animal products from my diet, especially dairy, gave me tremendous results. With a decrease in persistent life-long GI troubles due to my wonderful ulcerative colitis, I actually felt better!So experiment away, and figure out what works for YOU.
