Everyone needs a vegetable side dish that takes just a few minutes and always tastes great. You may be wondering why I would even include this as a "recipe" but in my non-cooking days I couldn't even cook vegetables without some help. This blog will assume every reader is at that level because this is a no judgement cooking zone people. So think of this as guidance if you must.
Time: 10 minutes
Ingredients:
1 bunch of asparagus
1 lemon
1/4 C EVOO
Salt and Pepper
How-To:
- Preheat oven to 350 degrees
- Trim the ends off the asparagus (about 1 inch)
- Lay asparagus in a baking dish
- Coat in EVOO
- Salt and pepper generously
- Squeeze juice of half of lemon
- Toss asparagus to coat
- Bake for 8 minutes, you want the asparagus to retain some crunch
- Remove from oven, squeeze the other half of them lemon on them
