Simple Asparagus

Everyone needs a vegetable side dish that takes just a few minutes and always tastes great. You may be wondering why I would even include this as a "recipe" but in my non-cooking days I couldn't even cook vegetables without some help. This blog will assume every reader is at that level because this is a no judgement cooking zone people. So think of this as guidance if you must. 



Time: 10 minutes

Ingredients:

1 bunch of asparagus 
1 lemon
1/4 C EVOO
Salt and Pepper 

How-To:
  1. Preheat oven to 350 degrees
  2. Trim the ends off the asparagus (about 1 inch)
  3. Lay asparagus in a baking dish
  4. Coat in EVOO
  5. Salt and pepper generously
  6. Squeeze juice of half of lemon 
  7. Toss asparagus to coat
  8. Bake for 8 minutes, you want the asparagus to retain some crunch
  9. Remove from oven, squeeze the other half of them lemon on them
