Maple Oat Cookies

These cookies are easy to make and satisfy that oatmeal craving. 


Time: 30 minutes

Ingredients:
2 cups of instant oats
3/4 cup plus 2 tablespoons flour (half white and half wheat for me)
1 tsp cinnamon
1/2 tsp nutmeg
1/8 tsp salt
1/2 cup canola oil
1/2 cup maple syrup
2 tsp vanilla extract

How-To:

1. Preheat oven to 350 degrees
2. Toast the oats over medium heat in a sauce pan for about 5 minutes
3. Meanwhile, whisk together the oil, maple syrup, and vanilla in a medium
    bowl
4. Turn off the heat, add the cinnamon, nutmeg, flour and stir
5. Add the dry ingredients to the wet bowl
6. Mix together until combined
7. Use parchment paper to cover baking sheets
8. Scoop out tablespoon sized balls of dough and flatten down (they will 
    only slightly expand)
9. Bake for 15 minutes
**Optional: press in chocolate chips after removing from oven.
