Cote Cobbler

This is a family staple in my house. I realize this is in fact a "crisp" and not a cobbler, however I have never fully understood the difference and cobbler sounds cooler, so there.


Time: 1 hour

Ingredients:

Filling:

3 granny smith apples
2 pears, nectarines, more apples whatever is in season!
1/2 C blueberries (pronounced bloobs in my head)
1 tsp cornstarch
zest of one lemon
a few tablespoons of sugar depending on the fruit/personal preference

Topping:

1 C brown sugar
1 C flour
1/2 C butter
1 C oats


How-To:
1. Preheat oven to 350 degrees
2. Peel the fruit unless you prefer the skin on
3. Chop fruit into roughly 1 inch pieces 
4. In a mixing bowl, combine all the fillings and empty into 9 inch pie pan
5. In a food processor, pulse the sugar and flour 
6. Add the butter in in several large pieces and pulse again until pea sized 
    balls are present
7. Add the oats and pulse QUICKLY only 2-3 times, you want the oats to be 
    almost all whole
8. Put the topping onto the fruit bottom in the pie pan, pack down slightly
9. Bake for about 45 minutes
