Peanut Sauce Noodles

This Peanut Sauce is amazing. Add it to just about anything and it tastes great. This recipe is just the sauce, noodles, and green beans, but broccolli and onions are also great in it.

Time: 35 minutes

Ingredients:

Sauce:
2 tsps peanut oil
3 garlic cloves (minced)
2 tbsps fresh ginger (I use a cheese grater to mince)
1 C water
2 tbsp soy sauce (or low sodium, or Braggs Liquid Aminos)
1 tsp ground coriander
2/3 C peanut butter, the natural stuff no Skippy allowed
2 tbsp maple syrup
3 tbsp rice vinegar
2 tsp Asian chile sauce

How-To:

  1. In a small sauce pan, add the peanut oil, garlic, and ginger and saute over medium heat
  2. Add water, soy sauce, and coriander and bring to a boil
  3. Add the PB and turn heat to low
  4. Whisk all together
  5. Add maple syrup, vinegar, and chile sauce
  6. Remove pan from heat
**Hint: This whole process is rather quick so have all the ingredients measured out and ready to go, that way you won't be spooning out thick PB while your sauce is boiling over.

Now you have delicious Peanut Sauce to add to whatever your heart desires! Prepare noodles to your liking, steam some broccoli or de-thaw some green beans and add together.
